This is Thai chili, garlic mash with 3.5% salt by weight. This is 12 days in, it’s hardly given off any gas in the vacuum bag. Is this normal?

Have you been keeping it in a cold place? Temperatures can really affect how quickly your ferment will progress. It doesn’t look like anything has gone sideways in there, so i tjink you’re still good. I’d give it a few more days, to a week, and see what you’ve got then.
