Ohhh yeah those things, i always thought it was the liver or something. Very tender and tasty.
Parasites would be long and stringy and look like a worm, but they would be dead from being boiled in the can regardless and wouldn’t be dangerous to you. Flash freezing also disintegrates parasites so most sushi is fine too. The only real risk for parasites is eating wild-caught never-frozen fish, they will definitely have parasites

I once had something like that in a sardine as well and it had a nice, soft texture like pate. Otherwise tasted like sardine.
