I'm pretty much vibe baking at this point because I don't have the energy for 10 laminations and 6 cold proofs, but this is what I used for this batch (first pic):

110g starter (10 g from the fridge, 50g water/50g flour, forget it on the counter for a day)

300g wheat flour, 175 dinkel flour, 275g water

Mix that roughly, leave it for one hour.

Add 10 g salt, Stretch and fold until it feels right, leave it in the fridge overnight.

Take it out in the morning, form 2 baguettes, leave them for about two hours on a floured(?) dish towel.

Preheat the oven 250° for 40 minutes, pot with water and tray included.

Put semolina on the tray, then the baguettes, then bake for 20 mins

Let them cool. Yay ugly baguettes, be proud.

    you could say this is a regional style of shaping bread meant to represent such as such and I am sure some people would believe you.

  6. I would eat it. Slice it like garlic bread / bias cut and no one will ever notice. Shape aside the crumb looks good actually!

    I think bread tastes better when you play with it !🤣 my niece and I made bread the other day and she added a TON of water to it so I had to do another stretch and fold- we made very good bread and even better memories. 🙂

    Haha here’s my ugly bread of the week!

    Overproofed bread that I threw a lot of olive oil and olives on and baked as if it was a foccacia.

    I forgot the salt. (Why is it so sticky and difficykt to shape and growing like this OH WAIT) —- Added salt 3h into the process by the last folds and threw in the fridge. It was a sticky dome of air by the next morning…

    Its neither a sourdough loaf nor a focaccia – its “artisanal bread” – and delicious
