OKO, the Pan Asian restaurant at The LaLiT New Delhi, will host Michelin-starred Chef Daisuke Mori for two exclusive dining evenings on October 23 and 24, featuring a six-course menu inspired by French and Japanese cuisine.
Mori’s cooking combines Japanese ingredients and seasonality with classical French techniques. His career includes stints at three-Michelin-starred Château Restaurant Joël Robuchon in Tokyo, two-star Restaurant Taillevent in Paris and one-star Restaurant Signature at Mandarin Oriental Tokyo.
The non-vegetarian menu includes giant mud crab with remoulade and Kristal caviar, girolles, lobster barley risotto, local white fish tempura and Challans duck with caramelised spice honey and black fig, followed by matcha panna cotta.
The vegetarian menu features spinach with Japanese sesame and silken tofu, girolles, green asparagus, Japanese vegetable tempura and roasted root vegetables. It concludes with matcha Basque cheesecake, Chantilly cream and brandy.
Each course will be paired by the hotel’s wine sommelier, Charles, with selections from Nashik, Argentina and Yecla in Spain. A measured 100 ml pour will accompany each course, spanning sparkling, white and red wines.
Vishal Sharma, general manager, The LaLiT New Delhi, said: “At The LaLiT New Delhi, we love creating exclusive experiences that offer our patrons something beyond the ordinary. Hosting Chef Daisuke Mori at OKO brings together Japanese precision and European artistry in an intimate Chef’s Table, offering Delhi diners a rare opportunity to experience his distinctive culinary style.”
The two evenings will offer limited seating, with the menu showcasing Mori’s interpretation of French-Japanese cuisine.
