Ingredients

  • 4 stripped corn cobs
  • 6 cups water
  • Chopped scallions
  • Olive oil
  • Seeded, chopped green chilies
  • ¼ cup cornmeal
  • 2 chopped potatoes
  • Crema or sour cream. (Optional)

    Preparation

    1. Put 4 stripped cobs in 6 cups water; simmer 15 minutes; remove.
    2. In a separate skillet, sauté chopped scallions in olive oil with seeded, chopped green chilies.
    3. Add 1/4 cup cornmeal and cook, stirring, about 5 minutes.
    4. Add the scallion-and-chili mixture to broth with corn kernels and 2 chopped potatoes
    5. Cook until soft.
    6. Optional: Crema or sour cream.
    7. Garnish: Scallions.
