  • 6 sprigs fresh parsley

Preparation

  1. Preheat the oven to 325 degrees.
  2. Sprinkle the cavity of the turkey with salt and pepper to taste. Put the onions, celery and parsley into the cavity. Truss the turkey if desired.
  3. Rub the outside of the turkey all over with butter and sprinkle the outside with paprika.
  4. Place a rack in a roasting pan and place the turkey breast-side up on the rack. Place in the oven and bake about 15 minutes to the pound, from 2 1/2 hours to 2 hours 45 minutes. Remove the turkey and let stand 15 minutes. Discard the solids from the cavity and carve the turkey.
