  • 2 tablespoons extra-virgin olive oil
  • 3 to 4 ripe tomatoes, seeded and chopped
  • ½ cup basil leaves, coarsely chopped
  • 1 clove garlic, green part removed, minced

Preparation

  1. Cook the penne in boiling salted water and drain when al dente.
  2. Pour the oil into a large serving bowl and add the penne. Toss and add the tomatoes, basil and garlic. Season to taste with salt and pepper and serve.
  • This does not need cheese, but some people like it with freshly grated Parmesan.
