    I’ve got a few other ideas, curious to hear others thoughts. Didn’t know what to do with the sauce exactly – the dish can handle more than what’s there (just brushed on the chop), but wasn’t sure how to present. Next trial is in a plate-bowl with a polenta base, sliced chop centered, corn/thyme garnish around the perimeter. Still unsure what to do with sauce there either

    Polenta and pork look good. To be frank, you really missed with the sauce tho. That should have been drizzled on or around the pork or pooled in the center or just about anything except what you did there.
