Preparation
- Boil water in covered pot.
- Add noodles and cook according to directions, or about 60 to 90 seconds for angel hair. Drain. Serve topped with broccoli-bean curd mixture.
- If there is a choice, buy firm rather than soft bean curd.
- Hot chili-garlic paste and hoisin sauce are available in Oriental markets as well as in the specialty sections of many supermarkets.
- If fresh noodles are not available, use dried.
