It’s got caviar. That’s how you know it’s good. Because caviar. Caviar is expensive and expensive is good. Beef on its own isn’t as expensive as beef with caviar so beef on its own isn’t as good as beef with caviar.

If it were my dish I’d try and get the mushrooms a lot thinner and trim the nasturtium leaf with a sharp cookie cutter if it’s frayed.

I love the plate.. but beef tartare in my eyes needs more green, not mushroom, forget the huge mass in the middle drop an egg on this and lightly garnished with caviar would look way more appealing don’t even worry about the frayed garnish i think it looks natural and beautiful.
