
Made myself a spicy little something for lunches this week. Chicken Tortellini is joined by some Shrimp that was marinated in Penzeys Rojo Taco Sauce, veggies, peppers, and coated with a delicious homemade sauce.
First I made the tortellini and cooked the marinated shrimp and mixed them together. Then I sautéed some zucchini and onion (both some red and some vidalia sweet) in some homemade spicy garlic Achiote. Then I added a purée of garlic, tomatoes, grilled corn, 4 chipotle’s, 1 1/2 jalapeños, about 8 or 9 Arbol Chilies, 5 Chili Piquin’s, and a Tsp of Ghost Pepper Powder.
That whole mixture was seasoned with 2 hefty TB of Penzeys Southwest Seasoning before getting mixed into the pot with the tortellini and shrimp.
Finally I added my delicious red sauce, made by whisking three TB flour and three TB New Mexico Red Chili Powder into a couple TB of my spicy garlic Achiote until the flour has cooked. Then I added two cups of chicken broth, an 8 ounce can of tomato sauce, and a spice mixture that contained ground cumin (1 Tsp), smoked paprika (2 Tsp), Roasted Garlic (1 Tsp), Smoked Red Onion (1 Tsp), and salt (1/2 Tsp).
The result is not for the faint of heart or taste buds! But it is quite yummy!!
