
My go-to pancake recipe. I would usually top it with berries, but I’m fresh out. I topped it with hemp seeds, chia seeds, and elderberry syrup for today.
All measurements are guesstimates!
Dry:
– 1 cup oats
– Cinnamon
– Salt
– Baking powder
Wet:
– 2/3 cup soy milk
– 1 ripe banana
– 1 TBS ACV
– Vanilla extract
– Optional sweetener (I used elderberry syrup)
– Dairy-free chocolate chips
Directions:
1. Blend dry ingredients in high-power blender (such as Vitamix).* Empty into large mixing bowl.
2. Blend wet ingredients in blender. Mix into dry ingredients until combined. Texture should be thick, but slightly runny.
3. Preheat pan. The trick is to get it warm enough that the mix doesn’t stick to the pan, but not so hot that it burns.
4. Add chocolate chips to mix. Combine.
5. Cook pancakes, flipping once around the 2-minute mark.
6. Top as desired. Enjoy!
* If you omit the chocolate chips, then you can make the entire batter in the blender. I do find the batter easier to scoop out of the bowl as it starts to thicken though.

This with some melted peanut butter on top 🤤
