Feel free to add some veggies of your choice or tempeh/tofu/etc 🤍 hope you enjoy!Yields 2 servings:Package of rice noodles – mine has 200gFor the peanut sauce:2-3 tbsp tamari | gluten free soy sauce1/3 cup | 80g peanut butter1 tbsp rice vinegar (or juice of half a lime)1 tbsp sriracha1 tbsp liquid sweetener1 tsp garlic powder (you can use fresh as well)1 tsp ginger (fresh ginger is best but I didn’t have it)1 tsp chilli flakesAbout 1/5 cup | 40 ml of water (add slowly so you can see how much water you want)Toppings:Chives / spring onion – choppedSesame seedsPeanutsMint or parsley – coarsely choppedCook the rice noodles according to package instructions (I just dip mine in really hot water for 2 minutes, I don’t even use the stove)Mix the sauce ingredients (tamari, peanut butter, rice vinegar, sriracha, liquid sweetener, garlic, ginger, and chili flakes) really wellAdd water slowly, until it reaches your preferred consistency.Drizzle the sauce over the rice noodles and then top them with chives, sesame seeds, peanut and parsley. 2-3 tbsp tamari | gluten free soy sauce
1/3 cup | 80g peanut butter
1 tbsp rice vinegar (or juice of half a lime)
1 tbsp sriracha
1 tbsp liquid sweetener
1 tsp garlic powder (you can use fresh as well)
1 tsp ginger (fresh ginger is best but I didn’t have it)
