The way I make it!! I hate that roux mac and cheese..I can tell the difference I just don't like it. My grandmother made it this way Minus the sour cream..I add sour cream in mines.
What temp is the oven suppose to be? What are the measurements for the seasoning and liquid? That looks FIRE and I want to make it just right. 😊

5 cheeses, shredded
In a bowl an egg and some evaporated milk
Season with salt and pepper, ground mustard, cayenne, (looks like some more evapo milk?), all whisked up
Boil up water and add the elbow macaroni
Cook until al dente, strain, add some butter, some sour cream, and mix
Add the egg mix, stir
Add some shredded cheese, stir
Add some velveeta and whole milk and more cheese, and stir
Smell to check for perfection
Baking dish – add macaroni mix
More cheese
Rest of the macaroni
More cheese
Top off with mozzarella and cheddar cheese
Add some paprika and parsley (fresh used, but dried works)
Cook in the oven, covered for 20 minutes, uncovered for 20 minutes, and done.
