Herbs are delicate in flavor and each one has its own distinct taste. Chervil is sweet (reminiscent of anise), while parsley is fresh and bitter; chives taste mildly of onion, while tarragon has a licorice-note and is savory. In this salad, we balance the intensity of each herb, using a large amount of mild chervil, but adding chives in a smaller amount so they don’t overwhelm the dish.
