I just made this and it is amazing. I highly recommend, I’ve made tons of different berry syrups and this is the best by miles. If you don’t want it to be very sweet then cut down the sugar a little bit but the regular recipe isn’t over sweet. The cook time was spot on, I had the heat on high until it started boiling a lot and then I turned it to medium low. MAKE THIS!

Can you substitute the raw sugar and honey for monk fruit for lower sugar content?
This wasn't the video I watched before making my own blueberry syrup to pour over buttermilk pancakes but looking at the recipe in the description, she has the amount of blueberries to honey right (1/4 cup honey per cup of blueberries). The one I watched the dude simply said replace the sugar with honey if you want but gave impression you would use the same amount of honey as sugar when that will produce a honey syrup with blueberry highlights.
The honey of course can be adjusted to personal taste preference for sweetness. I discovered I like even less honey than the 1/4 cup to cup ratio.
Also, I didn't use cornstarch, though the thought occurred to me, nor a blender but just went with a soupier sauce with berries to pour on my pancakes. Delicious! In fact, I never really liked pancakes until I started making this simple syrup but now I do.
I like this recipe because it doesn't require a lot of ingredients
