Preparation

  1. In a mixing bowl, sift together the flour, baking powder, salt and sugar. Cut the butter into small pieces and add to the bowl. Using your fingers, quickly rub the butter into the flour so that the texture is like fine crumbs.
  2. While stirring with a fork, gradually add enough milk or water to make a soft dough. Mix it together with your hands so that all the ingredients are well blended. Break off pieces of dough a little larger than walnuts, roll into balls, then flatten to a thickness of about a half inch.
  3. Very lightly oil a large cast-iron or other heavy skillet. Heat over a medium flame until it’s very hot, then lay the bakes into the pan. Bake 4 to 5 minutes on each side, until the bakes are lightly puffed and golden brown. Serve hot.
