Broad bean hummus

Dried broad beans; 1 cup
Onion; half
Tahini; 2 tablespoons
Lemon Juice; 1 teaspoon
Vinegar; 1 tablespoon
Olive oil; 2 tablespoon
Garlic; 2 cloves, peeled
Salt; to your taste

• Boil the broad beans with half an onion until they are very soft.
• Drain its water and add the garlic, olive oil, tahini, lemon juice and vinegar. Blend it until you have a smooth texture.
• Your hummus is ready. When serving it, you can use the back of a spoon to make a crater and add a generous amount of olive oil, red pepper, parsley and pickles if you like to.

Fava
Dried broad beans; 500 gr
Onions; 2 small, cut in half lengthways
Olive oil 1/3 cups-80 ml
Salt; 1-heaped teaspoon
Sugar; 1 teaspoon
Drinking water; 1.4 litres

To garnish
Dill; 4 sprigs, finely chopped
Crispy onion- if you have at home
Fresh olive oil

• Place in the broad beans and the onions in the pressure cooker.
• Fill with soft drinking water. The water should be 2-3 cm higher than the beans.
• Close the lid and cook until the pressure gets high, cook 5 minutes and open the lid. If you don’t have a pressure cooker, the water you add should be 4 cm above the beans and you’ll need to cook them for about 10-15 minutes until they soften.
• Then add olive oil, sugar, and salt. Use a hand blender to make it silky smooth.
• Take the dish or bowl that you want your fava to take the shape of, pour some olive oil and rub so that the fava would be able to slide once it is cold.
• Place the mixture in the dish. First, allow it to cool at room temperature. Once cool, refrigerate for at least 2 hours.
• Your fava is now ready to be turned! It will look and taste great.
• This is my go-to substitute when I’m craving cheese or when I need a simple dish that will keep me full, guilt free…. Hope you give it a try and it becomes one of your favourites too.

Easiest Cypriot Broad Beans

Dried broad beans; 1 cup
Drinking water; for boiling
Garlic; 2 cloves, peeled
Olive oil; 3 tablespoons
Vinegar; 3 tablespoons
Lemon juice; a few drops
Salt; to your taste

This is the one of the simplest dishes. But actually this is how Cypriots eat many goodies.
Boil and add olive oil, garlic, lemon juice or/and vinegar to your taste.

• Boil the broad beans with drinking water. Cook for 5-6 minutes after it starts to bubble, until the beans start to soften and taste okay to eat. Boiling time for dried beans can vary, so check its softness.
• Drain the beans and transfer to the serving dish.
• Smash and puree the garlic cloves and add to the beans with vinegar, olive oil, salt, and lemon juice. Give it a mix.
• Eat it as soon as possible. I must say this becomes something else if it sits in the refrigerator overnight. My cousins also love eating this with black or green olives. As I said, these guys are Cypriots and they know about great food!

  2. I’m from California. Love Fava beans. I like to get them, whole in pod, oil, and grill on BarBQue, or sauté pan. Eat them out of the pod, like edamame. I usually find them fresh at Farmer’s Markets. Yum. I really don’t have much experience with dried fava beans.
    As for the immersion blender, it is one of my all time favorite kitchen gadgets. A “Must Have!” I will be using it today, for a broccoli soup. Used it the other day for a quick smoothie. I will use the attachment for a quickie chopper. I use it all the time!

  3. broàd beans is not common n d Philippines.i like 2 use green peas which are cheaper.i put dm in a blender uncooked but already in water 4 one night.then i saute without
    oil many onions,garlic then in d table,oil xtra vrgen olive,no sour no nuts .it is enough as a viand plus 5spice ,black pepper. i will make hummus later using ur recipe nd green peas.when mixed wd grated maturer than young coconut,plus a little whole wheat flour or none at all,i have patties already or pancakes.b4 ,when one kg. flour.was used,one freshly grated coconut was used.then i offer it as part of lunch.everything is eaten.it tastes like pancake wd much milk.we.have many coconut trees in d Philippines.when u were enjoying eating ,i also enjoyed looking at u.i am happy looking at u.thanks also 4 included history

  6. Hello Rafika, thank you for your wonderful turkish recipes, I love them as I use to live in an area where Turkish restaurants and community was very strong in my childhood. I follow your recipe for Fava which is delicious as taste wise, but that did never become hard in my fridge, it is still soft and like water liquid and I do not know why. I try this recipe twice as I thought I put too much water but it was correct. I don't know what it happen and why.

On Lima¿s markets that kind of handly blender that you are using is common for small apartments or people that cook little batches, but due to the space, I decided not to hove 2 things or more that do almost the same, so I use very strong blender, big capacity… Oster " Expert " is affordable and works fine for me. I assume most people in this city have a blender, if they have a family of 4 or more is a smart thing to get instead of using a small tool. Hope this answer helps you to develop more recipes for family batches. By the way… here is not too common to find restaurants of Turkish food…(here there is a lot of Chinese, Japanese, of course, Peruvian food… ), thanks to you I am enjoying new flavors , new textures… Wish you could share more about meal preps, and dishes the use less animal produce for the ones that are not vegetarian but would like to eat less of these… thanks in advance…

Mine came with a little base with blade and lid so blender can be attached and beans can be put in bottom part and pureed without messing up stick blender.

In my Instantpot i cooked them for 2 Minutes on high pressure, with a quick release. Perfect! Thank you so much for this ! I saw these large brass pots in hummus kebab shops in Kuwait long long ago and it's stuck in my memory as a child.
