  4. My aunt worked 40+ years in the kitchen at UC in San Francisco (UCSF). Whenever she made this it was usually gone in less than 5 minute. Same was true when she brought it to her sister's (my mom's) dinner parties. It would just melt off the tongue. Thank you Martha for reminding me how much I miss this!!😢💔

  6. Martha — why do you continue tempering your pastry cream?? In one of your prior cooking school videos a few years ago with the 3 students in your kitchen, you said to combine ALL the ingredients together and slowly heat up. You said the results are exactly the same and it's much easier to do. I've been using that method ever since and my pastry cream is exactly the same as the tempering version.

  13. before the 2nd baking of the crust, brush on some egg white – assures you won't have a soggy bottom

  14. Put it into little cups and feed it to the kids. Nope. We ate it. Kids didn't know what they missed.

    Seriously, though, this is an amazing recipe. Well worth making. I did it. An elderly neighbor wanted this pie so made it for him.
