Ingredients

1boneless skinless chicken thighs
2 cups day old jasmine rice
2 medium yellow onions, chopped
1 bunch scallions, chopped
3 large eggs
1/2 cup fresh carrots, diced or shredded
3 tsp avocado oil divided
2 Tbsp unsalted butter
4 Tbsp soy sauce, divided
4 tsp oyster sauce, divided
1 tsp sesame oil
6 cloves minced garlic or 1 Tbsp garlic paste
1 tsp ginger paste or minced ginger
Salt and pepper to taste
1/2 tsp chili paste, optional for spice
