  1. I put a lot more garlic in mine and I don't use vinegar I use lemon juice at the end. I also don't add the herbs until the end.

    I just put all the ingredients into a covered frypan and simmer slowly. No boiling of eggplant first. Shalom to us only in Christ Yeshua.

  5. Very healthy recipe, wonderful! Love the steaming vs deep frying. This looks delicious. There is an Indian recipe that is similar called Baigan Bharta.
    By the way, the pottery dish is lovely Moroccan handmade ceramics, but it is most likely a low fired bazaar item. The yellow, orange, and red glazes may contain lead which leaches out if anything acidic is placed on them. Best not to use this type of platter for serving. My parents were ceramists.
