Psari Plaki (Greek Style Baked Fish in Dutch Oven)
Greek lesson! “Psari” is in Greek fish and “plaki” means baked in the oven (usually with some veggies). The literal translation of plaki is a flat stone and when there’s a dish called plaki, it means it’s cooked on a flat dish in the oven. I usually make this recipe with sea bass or branzino or even with cod sometimes. My family loves it and even my daughter, she is two years old! She eats her fish! Wow! Greeks definitely know how to cook fish and this is the easiest and simplest but also delicious way to do it!
This is one of my favorite meals to eat any time of the year. I personally prefer to let this dish cool down and eat it at room temperature. It’s also one of the few fish meals I can eat the next day because I’ll just eat it cold.

Ingredients:

2 of your favourite fish (I am using Branzino today)
4 potatoes (medium-size potatoes), peeled and sliced
2 carrots, sliced into rounds
1 large onion or 2 smaller, sliced into rounds
1 large beef tomato, sliced into rounds
½ cup fresh parsley, chopped
½ cup Greek extra virgin olive oil
½ cup tomato sauce
2 garlic cloves, mince
2 slices of tomato & 2 slices of lemon
Salt and pepper

Preheat the oven to 350 degrees.
Slice all the veggies in rings and add them to the Dutch oven. Keep two slices of tomato aside. Add to the Dutch oven parsley, salt and pepper, Extra Virgin Olive oil and the tomato sauce.
Give them a good mix with your spoon and top it with your favorite fish. I am using Branzino today but use your favourite option!
Salt and pepper the fish both sides and stuff the belly of it with slices of lemon for extra flavor.
Top it with the slices of tomato that we kept aside. Add some olive oil and cover with the lid. Cook for 50 to 60 mins. Uncover and serve the fish with some freshly baked bread and your favourite salad.
