INGREDIENTS FOR THE SHORTBREAD CRUST:
►1/2 lb unsalted butter, room temperature
►1/2 cup granulated sugar
►1 1/2 tsp vanilla extract
►2 cups all-purpose flour
►1/4 tsp salt

FOR THE LEMON FILLING:
►7 large eggs, room temperature
►3 cups granulated sugar
►2 Tbsp lemon zest (from 4 to 5 lemons)
►1 cup lemon juice, freshly squeezed (from 5 large or 8 medium lemons)
►1 cup all-purpose flour

  1. I tried to make it but the Lemon mix went thru the bottom and I had no cake on the bottom. What did I do wrong? Did I overcook the shortbread?The flavors were there.

  2. I tried this today and it was a hit !!💛 I ran out of flour for the lemon filling mixture so I mixed it with a few tbsps of cornflour and it still turned out great! ✨

  6. Oh well, we’ll see how it turns out. I tried to take your recipe and make it more keto friendly. The almond flour doesn’t work like regular flour, and my crust came out soft, even with 10 minutes more of cooking! I poured the the custard onto it but it went through the crust! I think I’m going to end up with lemon cobbler!! LOL 😂

  10. I just made these and they are absolutely delicious. I did, however, have a possible problem. The bars came out very soft, to the point of turning to mush if you tried to hold them in your hand. The lemon layer seemed to be too soft.

    Should I: A) Use more flour B) Use les lemon juice C) Bake longer D) Eat with a fork E) ???

    The center was fully set before I removed from the oven, so I am not sure what I did wrong. These are the first every lemon bars that I have made.

I’ve made these lemon squares three times and they’re absolutely phenomenal but I find it difficult to remove the parchment paper from the sides I always end up ripping the paper and bits of it adhere to the lemon squares. Am I cooling them in the refrigerator for too long or not waiting for them to get to room temperature afterwards enough🤷🏻‍♀️
