Moroccan beetroot salad

Ingredients:
– fresh beets
– red onion
– fresh parsley and coriander
– salt and pepper
– cumin
– olive oil
– lemon juice

1. Wash the beets
2. Cook the beets on medium heat for about 30 minutes (the time may vary depending on the size of the beets)
3. Allow to cool and then peel the beetroot with a small knife
4. Chop the beets into smaller pieces
5. Finely chop the red onion and the fresh herbs
6. Mix together the red onion, fresh herbs, spices, olive oil and lemon juice in a bowl
7. Add the beets and stir

Note! Be careful when handling fresh beets as they produce a strong pink color that easily sticks to fingers and other things.
