About Pai:

Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the YouTube channel Pailin’s Kitchen.

Pai was born and raised in southern Thailand where she spent much of her “playtime” in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.

After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via YouTube videos, her cookbook, and cooking classes.   1. Just tried this recipe for the 1st time last night and it was amazing! However I notice that I get a lot of burnt black crumbs in my food every time I cook with my cast iron wok. Any tips on this? Also, would you make a video on how to properly clean & maintain an iron wok PLEASE?

  2. Ohhhh that looks sooo good!
    Personally, I would put the shrimp on a paper towel and dab the oil off the top and I always rinse the rice a couple times until the water runs clear before making coconut rice as it makes it fluffier and it won't stick together as much.
    Oh and slice a bacon size piece off each side of the pineapple before splitting and it will sit flat and not tend to roll.
    I just spend a couple months in The Kingdom and it ruined meeee! hahaha Even took some Thai cooking classes. The food is at another level.

  3. I had spicy pineapple fried rice in budapest at 11.30 pm and it was the best meal I had on the whole vacation! seriously ppl if you're in budapest visit Asian kitchen. it's the restaurant with food from Thailand, china and Japan and the meals are divine!

  4. Looks great. My local restaurant let’s us choose any meat (or tofu). Anything with pineapple automatically means choosing pork for me.

I have two children both are unable to speak/understand Thai, my daughter is graduated as biology(Molecular) from UTD University of Texas, now working at Cancer research Center so she can't cook but she eats Thai/American food. my son is big/tall 5.11 ft. now he is Cadet Academy of American Airline flight school, tuition costs around $100k/yr or $8330.00 per month and he eats most American food not Thai/Asian food. I graduated from UofM and I also speak/write four languages Thai/Lao/French/English.

  9. Looks great but I personally prefer my Thai Pineapple Fried Rice with Cumin powder instead of Curry powder. Otherwise looks delicious and good tutorial!

  11. Hello, just made this one. I used brown rice and a Bay Leaf. It came out great my wife lloves it. We are cooking Thai Food all of January 2023.
