RECIPE
Makes large salads for 2 very hungry people + extra dressing + breadcrumbs

▪8 raw chicken tenders
▪4 heads of little gem lettuce (2 heads per person)
▪20g or 1 1/2Tbsp olive oil (for cooking tenders)
▪50g or 1/4c olive oil
▪150g or 1 1/2c panko breadcrumbs (makes more than you need for salad)
▪20g or 4tsp chopped capers
▪Grated parmesan

Chop, wash, and dry/spin lettuce well. Preheat medium sauté pan over medium heat. Add squeeze of olive oil, and place tenders in pan. It’s ok if they’re cozy in the pan. We’re searing and steaming. Cover and allow to cook for about 5min. Flip tenders, cover again, and reduce heat to low to cook for another 2-3min. Tenders are done when internal temp reaches 145F/62C. Remove from pan and allow to res briefly.

Wipe oil out of pan, increase heat to med-high, and add 50g or 1/4c oil. Once shimmering, add breadcrumbs. Toss to combine. Add pinch of salt. Continue stirring and tossing while cooking to a nice golden brown for about 60 seconds. Remove from pan and allow to dry and cool on a towel.

CAESAR DRESSING:
▪1 large egg
▪45g or 1/2c grated parm
▪30g or 1 can of oil packed anchovies, rinsed well (SUBSTITUTE 25g Worcestershire if you don’t like chovies + add 15g more parm)
▪1 clove garlic
▪50g or 3 1/2Tbsp lemon juice
▪10g or 2tsp water
▪275g or 1 1/4c neutral oil (canola, light olive oil, avocado, etc)

Add all ingredients except oil to tall sided container and blend with immersion blender until solids are broken down then slowly stream in oil while blending.

TO ASSEMBLE SALAD (for 2 large salads):
Add lettuce, chopped capers, 4 very large pinches of grated parm, 4 very large pinches of breadcrumbs, chicken tenders (chopped), and top with 4-6+ spoons of caesar to your taste. Top with additional breadcrumbs, sprinkle of parm, and additional dressing.

  4. Must remove the tendon before cooking. Those things are gross. They either turn to rubber, or to slime, depending on the cooking method.

  6. Made this tonight. Very good. I'll have to maybe halve the amount of anchovies next time for my wife, but I liked it. I think you may have forgotten to add black pepper though, which I added.

  7. I make my own croutons from leftover sourdough from a crazy good bakery, cut into small (maybe 1/2”) cubes, but I love this fried breadcrumb idea for when I have run out of my croutons. I’ve got a tube of anchovy paste. What’s the equivalent US measure for that instead of a tin of them?

  8. Given that this is America, I would not trust any raw eggs. Can I use the pasteurized liquid egg in cartons for the egg portion?

  9. Those toasted panko, skip the olive oil and go with a bit of brown butter mix around till evenly distributed. Sprinkle on cinnamon and sugar, I prefer the sugar in the raw but normal sugar works as dose light brown sugar. Toss to mix, serve sprinkled on cinnamon apples, fruit salads, yogurt, banana dipped in, with watermelon chunks dabbed on… Plain with a licked finger to get the crumb/sugar dust. We all do it, don't lie.

  10. Holy crap! This is very good. So easy, cheap & fast. I made this in like 30 mins & it was so good especially for my wife who doesn’t like croutons.

    If you are like me and don’t have a lettuce spinner I put all the lettuce in a clean towel (not paper towel) & pulled up the corners so it is in a good sack. Then shook it out & helicopter spun my arm around (started in my shower to not get water everywhere…). Works well if you need the tip.

    Couldn’t believe how perfectly fishy, thick & coating this dressing is. It made me orgasm.
