INGREDIENTS:
πΉ Extra virgin olive oil (I used Early Harvest)
πΉ 1 large onion, chopped
πΉ 3 garlic cloves, minced
πΉ 2 carrots, chopped
πΉ 3 tsp dry oregano
πΉ 1 1/2 tsp cumin
πΉ 1 tsp rosemary
πΉ 1/2 tsp red pepper flakes
πΉ 2 dry bay leaves
πΉ 1 cup crushed tomatoes (from a can)
πΉ 7 cups low-sodium vegetable broth
πΉ 2 cups red lentils, rinsed and drained
πΉ Kosher salt
πΉ Zest of 1 lemon
πΉ Juice of 2 lemons
πΉ Fresh parsley for garnish
πΉ Crumbled feta cheese to serve, optional

shouldn't you take out the bay leaf before using the emersion blender?
