Ingredients for Spinach with Walnuts (Ispanakhis Pkhali)
(Serves 4 to 6)
2 to 2 ½ pounds spinach
1 cup walnut halves and pieces (4 oz)
Coarse salt
3 or 4 garlic cloves, peeled
1 teaspoon ground marigold
1 teaspoon ground blue fenugreek
¼ teaspoon hot red ground pepper or cayenne
1 cup chopped cilantro
½ cup chopped onion
2 to 3 tablespoons distilled white vinegar
½ cup pomegranate seeds
