  2. It is really funny that in UK you're using French word for zucchini "courgette" and "aubergine" for eggplant…😂

  3. love it, me personally///hm I add less oil, onions and zucchini and pepper fry without oil…also the eggplants dont need that much fry but thats my experience

  4. at the end,you put the aubergine on top of a lil couscousmountain so it does not dryadd some of the sauce you created

    Update: this combination has become a part of my current lunch time rotation. I pair it over baby arugula (my favorite green) either all together, or parts of this combination. Absolutely beautiful flavor combinations❤

  6. Down here in Aus, those 'baby aubergines' are known as 'lebanese eggplant' and they cost the equivalent of 2 pounds each! So this is definitely not an 'everyday food.

  8. I tried the whole recipe but done the couscous twice now. Its very nice and I used it as a base to add my own little flair to it. For the couscous I added a tea spoon full of cardamom for more aromatics then added some earthy tones it with some onion powder and a tad more cumin. When I plated it I chopped up cilantro leaves and put it on the plate then the couscous on top so I can get good thick bites of it on my spoon. For the eggplant I didn't have pistachios so I crushed some cashews to out on top and I was very pleased. I was so worried the harissa would be to hot for me since I don't enjoy spicy but the juicyness of the eggplant really mellows it out. Thank you so much for this recipe! You did a great job.
