Here is Claire’s, inspired by the pies her mom used to make when she was a kid and informed by all the pie-making wisdom she’s gathered in her baking lifetime. Sour Cherry Pie

Ingredients
Flaky All-Butter Pie Dough, Almond Variation (Pg 337)
All-purpose flour, for rolling out
8 cups fresh pitted sour cherries (2.5 lb / 1.12kg), from about 3 pounds (1.36kg)
1 1/4 cups granulated sugar (8.8 oz / 250g)
5 tablespoons cornstarch (1.6 oz / 44g)
2 teaspoons finely grated lemon zest
2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cardamon
1/4 teaspoon Diamond Crystal kosher salt
1/4 teaspoon almond extract
1 large egg, beaten
Demerara sugar, for sprinkling the top

  2. Delicious! Used mixed frozen berries – sour and sweet cherries and blueberries. Total bake time was 2.5 hours. Came out perfect! Will be more patient next time and let it fully COOL before cutting so filling will set. Thanks again, Claire!

  3. I went to the states a couple of weeks ago where I tasted my first sour cherry pie. Now I want to try and make it myself, but my pie plate is not as deep as the one you are using. Maybe 2/3 as high, if that makes sense 😉
    I wonder, how long does my pie need in the oven? Can I just keep an eye on the color of the pie?

  6. Throw away pastry? I almost fell over. My mom used to make "pie" cookies with the overage of dough. She would throw cinnamon and sugar on them before baking. My most favorite, ever! Cherry or blueberry….no maybe apple….is my favorite pie….I guess it depends on which one I am eating at the time. Love, love, love your channel!

  11. You can also do the lattice ahead on a cake round or flat plate and chill it. If it stays cold, you can slide the entire woven lattice as a whole onto the top of the pie. This helps avoid any of the fruit filling from getting where you don’t want it.

  12. I’ve made this pie SO many times and it’s SO good but this time I’ve forgotten too add sugar to the filling and it’s already in the oven… Do you think are there ways to rescue it? 🙈 maybe some kind of syrup?
