Filled Moroccan Pancakes (Mssemen/Rghayef) are a very popular midday snack in Morocco. They have different fillings depending on the family and the region: vegan, with fat, or with minced meat. They are deliciously soft and full of flavours and spices. They are served, of course, with Moroccan mint tea. Give them a try and thank me later !!!

Ingredient:

For the Dough:
All Purpose Flour 700g
Fine Semolina 100g
Instant Yeast 4g
Baking Powder 4g
Salt 14g
Water 500 ml

For the Vegan:
Green Pepper 150 g
Red Pepper 150 g
Onion 250g
Parsley 2 Tbsp
Salt 1 tsp
Black Pepper 1/2 tsp
Sweet Paprika 1 tsp
Cumin 1 tsp
Coriander 1 tsp
Turmeric 1 tsp
Chili Powder 1/2 tsp

For the Meat:
Lamb Fat 100g
Onion 500g
Parsley 2 Tbsp
Salt 1 tsp
Black Pepper 1/2 tsp
Sweet Paprika 1 tsp
Cumin 1 tsp
Coriander 1 tsp
Turmeric 1 tsp
Chili Powder 1/2 tsp
