Now that's different. In all my life, I never seen beets prepared like that. Looks tasty.
Trick strain your yogurt for a thicker texture, in order to accommodate added liquids, such as lemon and olive oil😊

Not a fan because they tastes like good ole dirt, but the way she cook'em I would at least try them. You just got to like her style because she is fancey lol!
I love baked beets, and pickled beets! This looks good.
Just a note. Remember that you ate beets the night before and save yourself a visit to ER thinking something is terribly wrong.
