TRADITIONAL EZOGELIN SOUP
1 cup red lentil
1/2 cup rice
1/2 bulgur wheat
1/4 cup olive oil
1 onion, diced
1 tablespoon salt
5/6 cups water
For the sauce:
1/4 cup olive oil
1 tablespoon tomato paste
1 cup water
1 teaspoon black pepper
1 teaspoon dry mint
1 teaspoon paprika
Add olive oil to your pot and add the onions once softened tip in the washed bulgur, rice, and lentils and give it all a good mix.
Pour over the broth, bring to the boil then turn the heat down to a simmer. Cook for 20 -30 minutes or until the rice, lentils, and bulgur are cooked through
For the sauce add the olive oil and tomato paste to the pan then add the spices and water and cook for 6-8 minutes
Add the sauce mixture to the soup and mix thoroughly once the soup starts bubbling turn the heat off
Blend the soup mixture and its ready to serve
