Beyti is a Turkish dish consisting of ground lamb (sometimes beef), grilled on flat skewers and served wrapped in lavash and topped with tomato sauce and yogurt.
The lamb is traditionally chopped by hand with large kebab knives, with enough fat in so that while grilling the fat drips onto the slow-burning coals, sending fragrant smoke back up toward the kebabs. The result is a crispy, crumbly lattice of meat.

Ingredients:
• 600 g lamb meat (shoulder and belly / ribs), minced
• 1 red paprika pepper
• 3 cloves garlic
• 1/4 bunch parsley
• 4 tsp pul biber (chili flakes)
• 3 tsp salt
• ½ tsp black pepper
• 1 tsp paprika powder
• 1 tbsp tomato paste
• Lavash bread
• 50 g butter
• 1 cup water
• 300 g Turkish yogurt
• Tomatoes and green chilies garnish

Thanks for the skewering tips some were unknown to me. My son brought me over a zirh that I used once but now I’m more confident of doing a better job after watching this. Do you shoot for a high fat content for the minced meat? Looks absolutely wonderful.
