Ezogelin Corbasi, also known as Bride’s Soup, or the national soup of Turkey. No matter what you call it, it is superbly delicious. The soup is much greater than the sum of its parts; all ingredients come together to form a symphony of flavor unmatched in any soup I have ever tasted before. There are so many variations from the main, from spicy hot to mild, to keep everyone coming back for more. That is a good thing: deliciousness for every palate! Keep in mind the fresh lemon juice over your bowlful is a key part of the final measure. Give yourself and your family a treat with this soup. Ingredients Follow:

1 LB Red Lentils
1/4 LB Bulgur Wheat
1 Large Onion
1 LB Tomatoes
6 OZ Tomato Paste
4 TBSP Sweet Paprika
2 TBSP Chili Powder (optional)
2 TBSP Dried Mint Flakes
2 TBSP Butter
1 TBSP Cracked Black Pepper
1 TBSP Cayenne Powder
1 TSP Ground Cumin
Olive Oil
Salt
Water

  2. John, your Turkish lentil soup is obviously thick, rich, creamy and bursting with exotic, wonderful, new flavors! The squeezes of lemon really kicked this soup over the top! My mother used to make us lentil soup. It was pretty good, but it didn't look this good! Awesome job tocayo!! Save me a big bowl!!

  4. Quite different from the lentil soup I make – we usually prefer green lentils and I add spinach. I'll have to try this version. Turkish food is not in my flavor realm.
