3 Simple Summer Salad Ideas!

Summer is the perfect time for salads! They are simple to make, require minimal stove time, and provides that cool refreshing taste that everyone loves under the scorching sun. In this video we will show you how to make a Greek Pasta Salad, our personal favourite and can easily double as a main meal, a Quinoa Chickpea Salad with Tahini Dressing, and finally a Strawberry Spinach Salad with Candied Pecans that is guaranteed to impress guests or your own taste buds.

Ingredients:
Greek Pasta Salad:
16 oz pasta
1 cup peppers
2 cups cucumber
1/2 cup red onion
2 cups tomato
1/2 cup olives
1 cup feta cheese
1 clove garlic
1/3 cup red wine vinegar
2 teaspoon lemon juice
1 teaspoon sugar
2 teaspoon oregano
1/2 cup olive oil
Salt & pepper

Quinoa Chickpea Salad:
1 cup dry quinoa (cooked in 1 3/4 cup of water)
1 pepper
1/2 carrot
2 green onions
1 bunch parsley
1 1/2 cup cooked chickpeas
1 clove garlic
1/2 cup tahini
1 tablespoon olive oil
3 tablespoon lemon juice
1 teaspoon cumin
Salt & pepper

Strawberry Spinach Salad
1 1/2 tablespoon brown sugar
1/2 tablespoon butter
3/4 cup pecans
Red onions
Strawberries
Spinach
Goat cheese
1 clove garlic
1/4 cup balsamic vinegar
1 tablespoon Dijon mustard
2 tablespoon honey
3/4 cup olive oil

Instructions:
Greek Pasta Salad:
1. Cut the peppers, cucumbers, onions, tomatoes, feta cheese, and olives into small cubes. Put together into one bowl.
2. Chop garlic, add red wine vinegar, lemon juice, sugar, oregano and mix.
3. Slowly add olive oil into Step 2 mixture while continuously whisking to emulsify. Season with salt and pepper to taste.
4. Combine dressing and salad and toss together.

Quinoa Chickpea Salad:
1. Cook quinoa and let cool.
2. Cut pepper, carrot, onion, parsley and put into bowl. Add chickpeas.
3. Add chopped garlic, tahini, olive oil, lemon juice together and whisk. Add water until it is at desired consistency. Season with salt and pepper.
4. Combine everything together and mix.

Strawberry Spinach Salad:
1. Add brown sugar, butter, and pecans to a pan. Cook for 2-3 minutes or until the sugar caramelizes. Transfer to plate to cool.
2. Compose the salad however you like with the ingredients.
3. Add to bowl chopped garlic, balsamic vinegar, Dijon mustard, and honey. Slowly add 3/4 cup of olive oil while continuously whisking to emulsify dressing.
4. Drizzle dressing over composed salad.
