Ingredients :
500 grams All purpose flour
500 grams “hard” or bread flour
1 tablespoon sugar
2 tablespoons salt
2 tablespoons extra virgin olive oil – preferably Greek -:)
1-3 teaspoons dry yeast
600 ml water
Some extra all purpose flour for kneading/working dough
Some extra olive oil for the storage bowl

Notes :
– If you can’t find bread flour just use all purpose. No big deal.
– Amount of yeast is flexible. Dough will rise anyway …
– This dough makes great crunchy bread AND/OR pizza dough
– What makes this dough special is the fact that the taste improves with time.
– Every day it gets better. Keep it in the refrigerator for up to 7 days.
– Of course you can freeze it for much longer (baked or unbaked)
– And don’t forget. Every time you make bread you give your hands a great cosmetic treatment as well. One shot two birds.

  1. thank you for this simple recipe! I hope you can post a video which shows how it looks after it has been cooked. I like to go to Lidl to buy their fresh greek loaf, and i keep it fresh for up to a week, but i usually eat all of it before then. I hope your recipe taste similar. I wonder, is the water you used very warm, lukewarm or cold? The dry yeast i have at home says on the package it needs 45 celcius degrees to work. Is that true?
