Pan frying anchovies is a common method of cooking fish. In addition to its natural crispiness, our Crispy Fried Anchovies is done by coating the fish with seasoned batter. On top of it, the double frying technique will keep the anchovies crispy even after it is placed in a cold temperature. On the other hand, reheating the anchovies is also not a problem. It will stay crispy and will last longer. And remember, don’t miss the important part. The other secret is in the sauce.
INGREDIENTS:
****Sauce Preparation****
1 cup white vinegar
1 tsp garlic powder
1 tsp onion powder
1 tsp calamansi juice or lemon juice
1 tsp fish sauce
1 tsp ground black pepper
2 cloves garlic, crushed
2 -3 small red chili hot peppers
1 tsp dark soy sauce
3 siling labuyo (small green finger peppers)
½ tsp olive oil
****Prepping Anchovies****
1 tsp salt
****Fish Batter****
1 cup cornstarch
1 tsp salt
1 tsp ground black pepper
1 tbsp garlic powder
1 tbsp onion powder
**** Frying Battered Anchovies****
2 cups cooking oil

Thanks for posting. I have exactly the size of anchovies you use for the recipe and was looking for an answer if I need to gut them first. So glad to see that I don’t. It would be hard work. Not sure about refrying them again(for health reasons) and I will not put calamasi (?) sauce because I don’t have it. 👌🏻😊
