Italian Wedding Soup is not served at the wedding. The name of this soup “minestra maritata” in Italian means “Marriage”. This soup is a perfect marriage of ingredients like: greens, aromatic vegetables, meat and pasta.
“Pestata” is uses as a soup base.
ITALIAN WEDDING SOUP
Pestata is a paste of aromatic vegetables.
For Pestata you will need:
1 cup carrots
1 cup zucchini
1 cup onion
1 cup celery
5 cloves garlic
5 tbsp Extra Virgin Olive Oil
salt and pepper to taste
Method:
Using food processor, turn all vegetables into paste.
For Soup you will need:
4 qt chicken stock
4 cups Swiss chard
4 cups baby kale
1 cup small pasta( Acini De Pepe)
For Meatballs you will need:
2 lb ground turkey meat
1 cup grated Parmesan
2 cups Italian bread(cubed)
1 cup milk
½ cup chopped parsley
2 egg whites
zest from 1 orange
Spices: Salt,Pepper,Basil, Red Pepper flakes(all to taste)
Soak bread in milk for 5 minutes, then squeeze milk out.
Combine all ingredients to make meatball mix.
In a large pot add Pestata and heat up on medium heat for 5 minutes.
Add chicken stock and simmer on low for 30 minutes.
Add greens and continue simmer process for another 30 minutes.
Form tiny meatballs and cook separately in boiling water with some salt added.
As soon as they float to the top, take out and add to simmering soup.
Cook for 20 minutes.
At the end, add pasta, turn off the heat, close the lid and let soup rest for 10 minutes.
To serve your Wedding soup: chop some fresh Basil and shave some Pecorino Romano cheese directly to the bowl.

No! I'm sorry, the original neapolitan "minestra maritata" has nothing to do with that dish. "pestata" probably is a dialect word (never heard in standard Italian), it would be soffritto. By the way never seen in my life, I'm nearly 50 yo, pasta inside. Also meatballs inside are weird, they use different meats: boiled beef, chicken, spicy sausages, ordinary sausages (old people also add dried or fresh pig skins). By the way what is "pamijeeaaaan cheese? You mean Parmigiano? More, oranges in meatballs? 🤔🤔🤔🤔 Basil in the dish? 😳😳😳Greetings from🇮🇹.
