This is a perfect hors d’oeuvre to serve at your next party. It’s also a great vegetarian and gluten free snack. It’s like eating a Greek salad in one small bite. Easy to make and assemble ahead of time. And did I say healthy and delicious, because it is!!! Happy New Year!

Ingredients:
Feta cheese cut into 1/2” cubes
1 tbsp. Extra virgin olive oil
1 shallot minced finely
1/2 tsp. Chopped fresh oregano
2 tbsp. Diced roasted sweet peppers
1 basket large cherry tomatoes
Kalamata olives, quartered lengthwise
Toasted Pine nuts
Chopped fresh chives
