  1. You strained it but then use the same spoon to clean the bottom of the sift so what's on the spoon just got in the bowl

  2. Made this today and it turned out to be super delicious! My pudding mixture was pretty solid and not runny at all, maybe because I used for coconut, but it's still amazing. As topping one should really have whipped cream or something else refreshing as the cake is a bit rich.

    Also for those who like chocolate, if you use a chocolate cake as the base and put a layer of ganache on top of the cream, it'll make some nice bounty cake

  3. ATTENTION: For those of you having difficulty with setting your custard: a custard with both starch and eggs needs to cook almost until it boils. Often times if you do not cook the custard long enough the starch enzymes in the eggs will not cook down and the custard will never set. Once you tempter the eggs and put the tempered mixture back into the sauce pan continue to mix and cook the mixture until you begin to see a few (maybe 2 or 3) bubbles form, once that happens stir vigorously and then turn the heat off. you will see that the custard has thickened nicely and almost instantly firms up once placed in the fridge to set! Hope that helps (I've been researching since I too had the same problem until I tried this method and it came out beautifully). By the way, if you have already made the custard and it has been chilling in the fridge still not setting DO NOT throw it away you can reheat the mixture and try this method!

  6. I very much love to lightly toast my coconut first to get the moisture out of it then grind it up into dust in my blender before placing it in the custard. I don’t like stringy coconut flakes interfering with the set custard texture.

  7. my ex used to make this for me in the good days, and she used unsweetened coconut, otherwise it get overly sweet , it really is better. I love this pie, actually its the only type of pie I eat, and she used meringue , my preference is whipped creme

  8. If you don't have more rain on your coconut cream pie that's not a coconut cream pie whipped cream is for strawberries but you're feeling you've done an excellent job I will say that I'm 74 and I love good coconut cream pie honey

  11. Hi Laura i tried your coconut cream pie recipe and it was divine but i made my own pie crust cause I don't really like buying the pie crust that is already made and rolled out ready to place in your pie pan i just like to make the pie crust my self that is just me
