Beet Salad with a Lovely Vinaigrette



A super-fast raspberry, avocado beet salad that’s sure to please. I love how the sweet and tangy raspberries, delicious summer cherry tomatoes and crunchy almond slivers pair with the beets!

The dressing is also sure to become one of your favorites. I actually hate store-bought raspberry vinaigrettes but this homemade one is beyond delicious; raspberries, champagne vinegar, fresh lemon thyme, a dash of salt and honey, and olive oil of course make for a delicious dressing.

    Ok so I made this for dinner tonight and it was delicious. But, the beets took longer than 30min to cook and the toasted almonds were overkill because the raspberries already provide plenty of crunch.

    Beet salad is so healthy and delicious when you add the right spices, I fell in love with beets as a young child in the Mediterranean, I strongly believe that if you introduce beets and other healthy vegetables to children at a very young age, they will adopt it for the rest of their life, enjoy this recipe, I am going to try it too
