Thon O Hrour: Tuna, Harissa and Green Olives come together to make this classic Moroccan sandwich.
1 soft baguette
1 5oz can of tuna in olive oil, drained
2-3T harissa
1/4c pitted green olives, sliced
1T olive oil
Salt and pepper, to taste
Open tuna and drain the oil. Flake the tuna with a fork and add it to a small bowl with a good quality olive oil, salt and pepper. Mix to combine.
Slice baguette horizontally to create a sandwich. Spread a layer of harissa on the bottom portion of the baguette and top with desired amount of tuna and olives. Optionally, finish with a drizzle of oil and freshly ground black pepper.
Press the sandwich down to flatten it slightly and enjoy!
Note: You can adjust the amount of harissa paste based on your desired level of spiciness. Additionally, feel free to customize the sandwich by adding or substituting other ingredients to suit your taste as I did with the second sandwich. It contained spreadable cheese, tomatoes, onion and fresh parsley.

We have something similar in Malta called hobz biz-zejt. Ours we use kunserva instead of harissa, and usually it's tuna, olives, capers, onions, salt, pepper, and oliver oil – every family has other variations too, like lettuce, pickled onions, Goats cheese, carrots. And nothing beats maltese bread!
