This recipe of Turkish Bulgur wheat salad is a staple in my house and is made at least once a week. It is great for light dinner, filling lunch packed with nutrition and healthy ingredients!

3/4 – 1 cup coarse bulgur
2-3 tablespoon oil
2-3 tablespoon peanuts
1 small onion chopped
2 green onions chopped
1 small green pepper chopped
1 teaspoon cumin powder
1 teaspoon black pepper powder
1/2 teaspoon salt
1 tablespoon tomato paste
2-3 cucumbers chopped
1 small tomato chopped
2-3 tablespoon pomegranate arils
optional olives and avocado sliced
crumbled feta cheese to sprinkle
coriander leaves to sprinkle
