This rustic summer salad breathes new life into leftover bread and elevates the vibrant flavors of juicy tomatoes, refreshing cucumbers, and sweet onions. Buon appetito!

Ingredients:
Bread: fresh or stale! I used Ciabatta
3 or 4 ripe tomatoes
1/2 to 1 sweet onion such as Vidalia
1 large or 2 small cucumbers
1/4 cup or more of Extra Virgin Olive Oil
Salt to taste
Basil to garnish

Notes: Personally, I omit vinegar as tomatoes are already rather acidic. You may add vinegar if you would like it to be tangier.

  4. I worked at a pizza place that was ran by a Sicilian family.

    The owners could barely speak a word of English.

    The mother made two things (out of the innumerable delicious meals she made) that I couldn't get enough of.

    One was somewhere between soup and pasta and it had small pieces of spaghetti, hamburger, potatoes and I know there was cinnamon maybe peas. Delicious.

    The other was a pizza she made around the holidays that had somekind of anchovie sauce and a very different dough from the pizzas they sold.

    If you know either of these and would find them to be a good video, I would love instructions on making them.

  12. I discovered your channel recently and love watching your videos. You make everything so clear. I grew up in Melbourne, Australia where there are many people who came from Sicily, so I am familiar with some of your dishes (although caponata in Melbourne is very different from yours!). I have wonderful memories of having weekend lunches with my family's friends who had come from Sicily and they would bring a cold picnic pasta dish (not a pasta salad). Is that something you know? I would love to know how to make that. Also in your video on the lamb pie for Easter (most interesting!), you mention at the end an orange salad which is very common in Sicilian food.   24. without cucumber, we just call it tomato salad, I would add also a drop of balsamico, oil, and a pinch of slat and pepper.
