Breakfast Burrito

Ingredients:

1 Pack Burrito Tortillas
4 oz Turkey Sausage
4 Slices Turkey Bacon
4 Eggs
1/3 Cup Sweet Onion (finely diced)
1/3 Cup Green Bell Pepper (finely diced)
1 Tomato (finely diced)
2-3 Red Skin Potatoes (diced)
1/2 Cup Fresh Cilantro
1 Lime
Cotija Cheese
Olive oil
Salt and Pepper

Salsa Ingredients:

2 Tomatoes
1/2 Sweet Onion
1 Jalapeño
2-3 Garlic Cloves
1/2 Bunch Cilantro
1/2 Lime
1-2 Tbsp Olive oil
Salt and Pepper

Instructions:

*In a dry pan on medium heat, dry roast tomatoes, onion, garlic, and jalapeño until they blister slightly and get some color. In a blender or food processor add roasted tomatoes, onion, garlic, jalapeño, cilantro, lime, olive oil, salt and pepper. Pulse salsa until smooth but still has a little texture.

*In a medium size pan on medium heat, coat the bottom of the pan with olive oil and cook turkey bacon until crisp. (Set aside)

*In a large pan on medium heat, add 1 Tbsp of olive oil and turkey sausage. Brown sausage then add onion and bell pepper to the pan. Continue to cook for 5 minutes and season to taste with salt and pepper.

*While sausage is cooking in a separate large pan, add 2-3 Tbsp of olive oil, diced potatoes, salt and pepper. Cook potatoes until they are crispy out the outside and soft on the inside.

*Next scramble eggs in a bowl then add to the pan with the sausage, peppers, and onion. Continuously stir the eggs creating a soft scramble.

*Heat the burritos in a cast iron skillet for about 15 seconds a side.

*Now it’s time to build: start by adding your sausage and egg scramble on the bottom, crispy turkey bacon, potatoes, diced tomatoes, salsa, cotija cheese, cilantro and lime juice. Wrap the burrito and sear the bottom in the cast iron skillet to seal it.

*Serve with some salsa on the side and….

  4. I'm brazilian and bro, all I can say is that it was a nice attempt, but you NEED to season it a lot better next time. Try putting more beans. Use less meat. Put some salt with the beans. Cook the beans in a pressured pan. Use the sauce which is gonna form from the pressured pan itself. Add minced garlic fried in pork fat into the sauce. Add powdered black pepper. Put the meats all into this pan and let the whole thing simmer. If you want, add some vegetables in there (like some roughly chopped lettuce). BOOM YOU GOT A FUCKING DELICIOUS MEAL (a lot faster)
