Lentil soup is a classic vegetarian soup recipe. It’s hearty, healthy, delightfully filling (with plant-based protein), and warming on those cold, wintery days. While there are many variations of lentil soup, you can’t go wrong with a simple, Mediterranean version.

I always love an easy, one-pot soup recipe like this as it’s easy to meal prep and reheat. It’s perfect for lunch or dinner and it’s naturally gluten-free, vegan, and dairy-free, making it perfect for almost all your guests!

  1. Definitely giving this one a try. 2:22 If you rinse your eyes with warm water before slicing up your onions it helps a great deal, fyi

  2. Here's How To Cut ONIONS WITHOUT TEARS . Put a Fan On High Blowing across the front of your body and across the onion . Works Perfect , No Tears .

  3. okayy just made this and it slaps! i subbed spinach for kale and personally i really recommend blending the spinach/kale for a better texture. mine was also really thick and i served it with little homemade garlic bread slices. going in the mental recipe book for sure

  4. Quick suggestion: when slicing onions, do not remove the root end, that is why it burns your eyes. Hope that helps.

  5. This is my sign to get the immersion blender I’ve had on my list for a few years now. Thank you!

  6. When you dice an onion…you don't cut the "root" part of the onion off.. that should limit the tears during dicing.

  7. Just made it and it’s totally fool proof. Smells so good and I didn’t even have the 🔥 roasted tomatoes n vegetables. The herbs and taste combinations are nice.

  8. After peeling the onion, rinse it under water en rinse your knife as well.
Then slice. Since I started doïng this, I can peel and slice 5 onions and no tears anymore. 🎉🙂
(Don't forget to rinse your knife as well after each onion.)

  9. Well, if it doesn’t have ham or bacon in it, it’s not real lentil soup.

  10. I live off Lentil soup. One good way to make it if you want a creamier soup is to use potatoes. Once they cook for a while, they smash up in the pot and instantly you have a creamy soup.

  11. Buy some onion goggles for the eyes or use an immersion blender with a small bowel like attachment.

  12. I thought it was cute how you said cool Winter days. I'm guessing you live in California : D Thank you for the recipe. I would suggest it be called foam on the top of the soup rather than "scum". The recipe looks amazing.

  13. What I learned during COVID is that those masks, especially my KN95 masks, are really good for chopping onions! Seriously.

  14. A great trick for avoiding pain when cutting onions: set up a small fan on the counter, blowing across the cutting board. That way, the fumes don’t rise to your face, and instead, dissipate. No pain, no tears!

  15. Get them goggles! lol I just bought some cheap ones off Amazon. Mine are for swimming but they work just the same!
