I used way too much soy sauce for marinade and way too much oyster sauce in the sauce. I added too little broccoli as well. Notes for the pocket. It was delicious still!

1/3 cup water WAY too much for sauce recipe. use 1 tablespoon of water. you want the sugars in the sauce to caramelize a little in the hot wok QUICKLY or you make the broccoli soft and the water can't evaporate fast enough in the wok.
huge huge mistake with water in recipe.
1/3 water way too much for sauce and don't use baking soda. baking soda gives an odd flavor. just tenderize meat with hammer.

Worst recipe I've ever made. A real waste of a $20 ribeye steak.
The broccoli was extremely hard due to the short cooking time. The beef flavor was ruined due to the "Soul of the Sauce," Panda brand oyster sauce. But the most disturbing ingredient was the corn starch. It made the entire dish gritty.

It tasted good but my sauce came out runny, it never thickened up.
