This chilled cucumber soup can be made in 10 minutes. If you’re looking for an elegant starter for your summertime get together then, give this recipe a try. It tastes like liquified tzatziki! Delicious.

1 English cucumber, peeled and cut into thirds
1 cup Greek yogurt or more
2-3 tablespoons fresh lemon juice
1 garlic clove, grated
2 scallions, thinly sliced
1 teaspoon dried dill or 1 tablespoon fresh dill
2 tablespoons finely chopped mint
Salt and black pepper, to taste
Garnish:
• 1 English cucumber, diced
• Mint sprigs
• Olive oil
INSTRUCTIONS

Combine all of the ingredients in a blender. Puree until smooth.
Taste and adjust seasoning if needed.
Chill in the refrigerator at least 2 hours.
Serve with your favorite garnishes and some toasted bread. Enjoy!

  1. Mint has taken alot of my yard. One year I plan on starting a garden in the back yard but we keep our lawn care to a minimum. We get alot of butterflies and bees. Frogs also. But we lived here for a couple years before alot of stuff would grow so I am just getting back to soil. People use way to many chemicals. I can taste chemicals.

  3. Wow, this looks great! 99 degrees today, so I'm on the prowl for food I want to eat now. I could see this as dinner with some great bread and perhaps a big veggie dish of some kind (briam?) or veggies on the barbeque.

I'm not Greek and I don't cook very much but I would like a few nice simple things to do. And your recipes seem to be fairly simple. So I may try some.
