Easy Parmesan “Risotto”

Yield: 4 to 6 servings

Ingredients

1 1/2 cups Arborio rice
5 cups simmering chicken stock, preferably homemade, divided
1 cup freshly grated Parmesan cheese
1/2 cup dry white wine
3 tablespoons unsalted butter, diced
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 cup frozen peas

Directions

Preheat the oven to 350 degrees. Place the rice and 4 cups of the chicken stock in a Dutch oven, such as Le Creuset. Cover and bake for 45 minutes, until most of the liquid is absorbed and the rice is al dente. Remove from the oven, add the remaining cup of chicken stock, the Parmesan, wine, butter, salt, and pepper, and stir vigorously for 2 to 3 minutes, until the rice is thick and creamy. Add the peas and stir until heated through. Serve hot.

  14. This is similar to what restaurants do – they parboil their rice so that they don't have to spend 40 min for an appetizer. They still do stirring though.

    I knew it was a bad idea but I tried it in good faith this recipe does not work it does not make risotto it makes Gummy overcooked blown out rice porridge please don't call it risotto because it's not it's garbage and you should be ashamed of yourself lady

  18. Recently made this for 20 vegetarian monks. I used vegetable broth ( Better Than Bouillon). Tripled the recipe, using 4-1/2 cups of rice and tripled everything else too. I did hold back some of the salt since I used salted butter. Used only one large ceramic/enameled pot just like the one Ina uses here. I included 8 lbs of sauteed shrimp. They enjoyed it! One member said it was restaurant quality.

  19. No one liked it in my family, too bad because it was super easy to make, i just doesn't have much flavor.
