Easy Parmesan “Risotto”
RECIPE COURTESY OF INA GARTEN
Level: Easy
Total: 1 hr
Prep: 10 min
Cook: 50 min
Yield: 4 to 6 servings
Ingredients
1 1/2 cups Arborio rice
5 cups simmering chicken stock, preferably homemade, divided
1 cup freshly grated Parmesan cheese
1/2 cup dry white wine
3 tablespoons unsalted butter, diced
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 cup frozen peas
Directions
Preheat the oven to 350 degrees. Place the rice and 4 cups of the chicken stock in a Dutch oven, such as Le Creuset. Cover and bake for 45 minutes, until most of the liquid is absorbed and the rice is al dente. Remove from the oven, add the remaining cup of chicken stock, the Parmesan, wine, butter, salt, and pepper, and stir vigorously for 2 to 3 minutes, until the rice is thick and creamy. Add the peas and stir until heated through. Serve hot.

I’m going to try it this way, and if it works, I’m going to be so pissed from all the time I’ve wasted lol.
I’ve made this so many times. It’s the best. Thanks Ina!!
Just made tonight tweaked a little bit add onions garlic and anchovy paste it was very good
can you make this without a dutch oven? like if you had a stainless steel pot?
What about the sautéed onions at the beginning of making risotto?
No garlic, no onion?
This might be the only recipe I've seen Ina do where she doesn't add a ton of garlic to it lol
Yummmm!🙏🙏🙏❤️Thank you.🙏
I just received my 5th profit from Luiz. That guy is really amazing..
Ina: I’m using frozen peas but don’t tell anyone!
Me: calls the police
Oh I like this already!
Ina is a genius in knowing which food technics are worth utilizing and which ones are over the top fads etc.
I love the way she says risotto..she says risowtto. But then I'm British . I became addicted to Ina back in 2009 . I wish she was back on Food Network . 🥘🥗
I mean I love Ina but there’s a reason why risotto is slowly stirred on the hob. Stick to the original method. Much better.
Gordon Ramsay is fuming rn.😳
I just don't want mushy food. Maybe ina's is great 👍
45 min in the oven vs 20 min stirring and making a really creamy and flavorful dish? Whatever, not gonna bother with this one.
For sure, it looks fantastic. I am gonna make it exactly like this way.
I’ve been searching for a video of Ina’s mushroom risotto but can’t seem to find it. The video link on food network’s page isn’t opening. Can anyone assist me, please?
Wow she good at cooking food 💘💘💘💗💗💗❤❤❤💖💖💖💕💕💕💜💜💜
so you don't cook away the alcohol at all. risottos don't taste like alcohol
Sorry to say but that dish like dog food, 🐕 infact I am certain my dogs would refuse to eat that….
I 💙 Ina🥰
WHAT!!! No garlic? Miracles never cease to exist because she usually absolutely drowns everything with garlic.
This is similar to what restaurants do – they parboil their rice so that they don't have to spend 40 min for an appetizer. They still do stirring though.
What a woman!
Your smart Ina! People love to brag about making risotto since it takes so much work but you've outsmarted them with this! Love it!
It's called "El Dante" – Just like the pasta.
Love, love, love this recipe but curious if it can be made in the instapot? If so has anyone tried this and what’s the directions thx
This is such a great ideal. The worst thing in the world is to mess up risotto…….
Beautiful, she had me……..until she added the peas! Anything else, not peas!
No no no
I knew it was a bad idea but I tried it in good faith this recipe does not work it does not make risotto it makes Gummy overcooked blown out rice porridge please don't call it risotto because it's not it's garbage and you should be ashamed of yourself lady
I just made this recipe!!! It's to die for! I love you Ina! You're my #1 favorite chef!!
Ok, I’m trying this today! Had my Arborio rice for a long time but haven’t been able to try making risotto yet! I CAN do this! No more excuses! Thank you for this! ☺️❤️
Chef john has been doing this for years 😉
H&
Recently made this for 20 vegetarian monks. I used vegetable broth ( Better Than Bouillon). Tripled the recipe, using 4-1/2 cups of rice and tripled everything else too. I did hold back some of the salt since I used salted butter. Used only one large ceramic/enameled pot just like the one Ina uses here. I included 8 lbs of sauteed shrimp. They enjoyed it! One member said it was restaurant quality.
No one liked it in my family, too bad because it was super easy to make, i just doesn't have much flavor.
No herbs? Thyme?
moisture eh boutlair turkey stuffing said lend me a handful
Did she say "el dante"?
I love her
Just made it and feel like a genius…nice recipe 🙂
This is how I make my risotto now I just made it but with lobster
